So what should I do in order to obtain the parameter BITCOINJ_MULTICHAIN_DEMO_RAWHEX=... ?

Seems like you forgot the extra false parameter at the end of the getblock call? That gives the block in raw hexadecimal format, rather than picking apart its meaning.
