Hi Team,
One very basic question, when we transfer an asset from address to another, is it pay-to-pubkeyhash type or pay-to-scripthash type?
In which case will be it pubkeyhash and in which case will it be scripthash?

The type refers to the type of address in each particular output. A regular address is pay-to-pubkeyhash. Multisig addresses use pay-to-scripthash.
